PROBLEM TO BE SOLVED: To provide a powder soy source exhibiting sharp flavor such as salt with flavor and excellent in umami.SOLUTION: The powder soy source has the content of oil and fat of 1 mass% or less and contains an emulsifier of 0.025 to 1 mass%. 30 mass% or more of whole has preferably particle size of 65 mesh (opening 210 μm). It is preferably used for pouring, dipping and/or topping. A seasoning composition may be manufactured by combining the powder soy source with one or more kind of other seasoning raw material.SELECTED DRAWING: None
