the present invention consists of a process for the production of xylitol from lignocellulosic residues using candida guilliermondii that seeks to eliminate the drawbacks presented by the biotechnological processes of xylitol production currently used in terms of yield and in a conveniently shorter time, without the need for a detoxification process before fermentation; Therefore, a process is described which comprises fermenting a solution of xylose obtained from the hydrolysis of corn with a yeast candida guilliermondii and bleaching the medium resulting from fermentation with activated carbon to obtain xylitol.
