The present invention concerns a method for producing xylitol from lignocellulosic waste using Candida guilliermondii, which aims to overcome the drawbacks of the biotechnological processes currently used to produce xylitol in terms of yield and in a conveniently shorter time, without the need for a detoxification process prior to fermentation. The invention thus describes a method that comprises fermenting a solution of xylose obtained by means of the hydrolysis of corn cobs using the yeast Candida guilliermondii, and decolourising the medium resulting from the fermentation using activated charcoal to obtain xylitol.
