The present invention relates to a Pediococcus acidilactici GJM-1 strain or fermented sauces using the same. The strain of the present invention has excellent antibacterial activity and has an effect of controlling generation of amino-type nitrogen, thereby enabling fermentation of sauces having less various bacteria generation, hygienic properties, and good flavor and smell. Accordingly, the present invention can provide health functional fermented food through the Pediococcus acidilactici GJM-1 strain or the sauces such as fast fermented bean pastes using the same.
