The present invention relates to a method for extracting animal protein from a meat by-product of livestock products, which is capable of removing unique smell of meat. According to the present invention, the method comprises: a step (a) of removing foreign matters from a meat by-product and washing the meat by-product to prepare a raw meat material; a step (B) of inputting the prepared raw meat material in a blood remover and filling the blood remover with water to remove blood for 8 hours or more; a raw meat material extraction step (C) of inputting the raw meat material completing blood removal in an extractor and filling the extractor with water to immerse the raw meat material in the water, heating the mixture to perform hot water extraction in a temperature condition of 100 to 105°C for 11 to 12 hours, and holding the mixture for 20 ±5 minutes to settle solids; a step (D) of opening an external valve of the extractor after completing raw meat material extraction to gradually discharge steam for 5 to 10 seconds, supplement water to an extract, and pass and transfer the extract through a filter mesh net to a concentrator; a concentration step (E) of concentrating the extract transferred to the concentrator in a decompressed state for a predetermined time; a step (F) of circulating the concentrate through the filter mesh net after completing concentration to remove solid, and disinfecting the concentrate, from which the solid is removed, in a temperature condition of 121 to 125°C for 15 to 20 minutes; and a step (G) of packing the disinfected concentrate by using a sealing machine.
