The present invention relates to a method for producing traditional walnut vinegar, comprising: a first step of producing Danyangju; a second step of fermenting the Danyangju; a third step of producing mixed crude liquor by adding Yiyangju to the fermented Danyangju; a fourth step of producing refined rice wine by fermenting the mixed crude liquor; and a fifth step of mixing walnuts with the refined rice wine to proceed with fermentation. According to an embodiment of the present invention, it is possible to produce walnut vinegar having a high absorption rate in the body by proceeding with a high temperature fermentation process compared to a conventional vinegar product.
