The present invention relates to a composition for a meat processing product comprising the Wisella sibaria JW15 strain and a method for manufacturing the meat processing product using the same. In more detail, the present invention promotes lactic acid bacteria proliferation, has excellent fermentation ability and nitrite reduction ability, and is used for meat processing products, including the Isella Sibaria JW15 strain (Accession No: KACC91811P), which has an effect of improving the color and texture of meat products. It relates to a composition and a method of manufacturing a meat processed product using the same.
