The present invention relates to a method of manufacturing an organic acid mineral material that can be used as a food additive and a health functional food raw material, and more particularly, to a food additive composition comprising a metal ion-organic acid salt skeleton structure compound, and a method of manufacturing the same. The food additive composition according to the present invention has excellent cancer targeting properties and contains a metal-organic skeletal structure (MOF) compound that exhibits a remarkable effect on cancer cell death and growth inhibition, thereby showing the effect of improving the prevention or treatment of cancer, and toxicity in the body. There is no biodegradability and biocompatibility is improved.
