According to one embodiment of the present invention, provided is a poultry wing deboning apparatus. According to one embodiment of the present invention, the poultry wing deboning apparatus comprises: a rotary plate including a mounting surface on which a tip portion of a wing is mounted; a fixing plate disposed on an upper portion of the mounting surface to be able to move in a vertical direction and configured to fix the tip portion of a wing mounted on the mounting plate; a bent plate on which a body portion except for the tip portion of a wing fixed to the mounting surface is mounted; arrangement plates arranged at both sides to pressurize the body portion mounted on an upper surface of the bent plate from both sides; a bone removing blade fixed to one side of each arrangement plate and configured to compress and fix a front end portion of a wing bone arranged inside the body portion while the arrangement plates pressurize the body portion from both sides thereof; and a withdrawal motor driven to enable the bone removing blade to be located away from the mounting surface so that the bone removing blade draws out the wing bone from the inside of the body portion to the outside. According to the present invention, the fixing plate is capable of easily fixing a tip portion of a wing of poultry to the mounting surface.
