According to the present invention, a Lactobacillus sakei JNU60 strain has excellent antibacterial activity against foodborne pathogens. As described above, in order to improve the functionality and storage of food using rice, such as rice cake, the present invention produces fermented rice flour using a Lactobacillus sakei JNU60 strain. The rice flour produced therefrom inhibits the growth of mold such as B. thuringiensis and P. aeruginosa and foodborne pathogens such as bacteria to delay aging, and prevents spoilage to ensure maximum storage.
