The present invention relates to a fermented citron beverage manufacturing method, and more particularly, to a fermented citron beverage manufacturing method in which taste and functionality are improved by fermenting citron. The fermented citron beverage manufacturing method of the present invention comprises: a first step of washing citron, mincing citron, mixing it with water, and heating to prepare a citron heated product; A second step of preparing a citron mixture by cooling the citron heated product and then mixing sugar and lactic acid bacteria; A third step of fermenting the citron mixture to prepare a citron fermented product; A fourth step of preparing a citron juice juice by washing the citron with water and then juice; A fifth step of manufacturing citron chips by washing the citron with water, then cutting it and drying it; A sixth step of preparing a coated sugar solution by mixing cola bi juice and sugar solution; A seventh step of coating the citron chips by immersing the citron chips in a coating sugar solution; And an eighth step of preparing a fermented beverage by mixing the coated citron chips, citron juice, fermented citron, and water.
