The present invention relates to a method for producing functional soybean paste and soy sauce using the leaves and fruits of a vitamin tree. According to the present invention, the taste and aroma are excellent while being further reinforced nutritionally by various materials including the leaves and fruits of the vitamin tree. Doenjang and soy sauce can be manufactured, the fermentation period is shortened, and soybean paste and soy sauce can be manufactured in a hygienic safe method.
