A composition of medium-chain triglycerides comprising at least 13% C8 (caprylic acid), at least 8% C10 (capric acid) and at least 20% C12 (lauric acid) with less than 5% of the content being other fatty acids. The fatty acids may be derived from coconut oil or palm kernel. The composition may comprise an antioxidant such as citric acid. The composition may be incorporated in a thickening substance or gallant which may comprise bentonite clays, fumed silica or magnesium aluminium silicates. A food emulsifier comprising the composition and optionally monoglycerides or stearic acid or oleic acid, polyglyerol fatty acid esters or polyethoxylated sorbitan esters. Use of the composition as a food additive, nutrition supplement, cosmetic, solvent, emulsifier, formulation aid, food grade lubricant, release agent, processing aid, solvent, vehicle, stabiliser, thickener, texturiser or emollient.
