摘要

Nanotechnologies are opening up new horizons in almost alludscientific and technological fields. Among these, applicationsudof nanotechnologies are expected to bring large benefits andudadd value to the food and food-related industries through the current regulatory frameworkudwhole food chain, from production to processing, safety, packaging,udtransportation, storage and delivery. Nanotechnologyudconsists in the realization and manipulation of nano-sizedudmatter, the unique properties of which with respect to theirudbulk counterparts are illustrated and discussed. Then, theudmain tools and techniques routinely used in nanotechnologyudfor the nanoscale characterization of food matrices as welludas for the analytical determination of nanomaterials in foodudsamples are reviewed. Finally, safety and risk assessment issuesudare discussed and an overview of applications of nanotechnologyudto the food sector is provided along with a description of the
