The sampling protocol has been prepared to support the Pathogen Reduction/HACCPregulation. Carcass sampling for broiler and turkey carcasses remain the same as the nondestructive whole bird rinse which was used in the FSIS Nationwide Microbiological Baseline Data Collection Programs.
