The National Pecan Shellers Association met in Charleston in late February for its Mid-Winter meeting with a program theme of "Making Sense of the Marketplace: Then and Now."Two speakers addressed the "then" aspect of the pecan industry: Alice Kamps of the National Archives and Records Administration and Andrew F. Smith, a writer and lecturer on food and culinary history. Both provided some humorous and interesting anecdotesregarding pecans and food history in general. Smith displayed a fascinating cookbook, published in 1925 by the Keystone Pecan Research Laboratory of Pennsylvania: "800 Proved Pecan Recipes: Their Place in the Menu." Here is an excerpt from the forward of that book.
