The Frank Sinatra song "Nice and Easy Does It" could be a slogan for retail seafood trends today. "Consumers are time pressed," said Larry Andrews, retail program director at the Alaska Salmon Marketing Institute (ASMI). "They look for convenience andin most cases it is frozen and pre-portioned products." As part of an effort to meet that consumer demand, ASMI launched its "Cook It Frozen" campaign more than a year ago, with another recent campaign push in the fall of 2004. The Cook It Frozen campaign aims to convince consumers that cooking frozen seafood is quick and easy and can be done without a lengthy thawing process.
