Fresh meat retailing is being turned on its head in South Africa as the revolutionary case-ready or tray-ready concept gathers momentum. Latest to the game is Pick 'n Pay, as Brenda Neall reports.WOOLIES did it in 2005, and now it's Pick 'n Pay's turn to join the case-ready or trayready revolution for fresh meat. In conjunction with its suppliers, Fercon Foods in Cape Town and Fercon Meat Packers in Germiston, Pick 'n Pay quietly introduced mincein modified atmosphere packaging (MAP) a few months back, and there's more to come. National GM of Pick 'n Pay Butcheries, Ian Crook, reports that, also working with Fercon, the retailer will shortly be the first to introduce Sealed Air Cryovac's Darfresh vacuum skin packaging for value-added fresh meat products such as schnitzels and espetadas. Karan Beef in Gauteng will be doing similarly for high-value beef cuts. While Crook is quick to affirm that the retailer will always have service in its butcheries, it is moving with global trends and working with suppliers who can provide case-ready products.
