The 'fresh way' is a fast-developing concept in the western world. But this phenomenon is not just about selling more fish it is more about innovation and opening up new markets. This was the message that fittingly concluded the Fresh Fish Master Conference 2006 and the one delegates took with them to the three-day European Seafood Exposition. Organised by the Norwegian Seafood Export Council for Norge (Seafood from Norway) and staged at the Chateau du Lac in Genval, Belgium, on the eve of the exposition, the conference brought together dozens of the world's leading seafood industrialists.
