Summer is the time for picnics, barbecues the beach and seafood. For many consumers, summer is the ideal time for seafood. So for those on the front line of retail and foodser-vice, this is the season to ramp up marketing and make the most of freshfish and shellfish. Matching the catch and promotional activities to reap the best profits is vital. So what looks set to work for summer 2011? "Consumers are looking for different products when it comes to seafood in summer," says Elaine Robinson, category director for meat and fish at Asda, the U.K. derivative of Walmart.
