摘要

Milk incubated at 38oCcontaminated artificially with 232 PG aflatoxin M1 (AFM1) was treated with 2, 4 and 6g menthapulegium and/or 1, 3 and 6g/l probiotic lactobacillus acidophilus (1×108 cfu/g) and/orbifidobacterium bifidum (1×108 cfu/g). AFM1 was determined by ELISA at day 9 of refrigeration. Inrefrigerated yogurt maximum binding with aflatoxin occurred with 4g Mentha pulegium at day 9(194%), 1g Lactobacillus acidophilus at day 2 (146%) and 3g Bifidobacterium bifidum (148%).
