Eight malting barley cultivars were used to investigate cultivar and environmental effects on grain protein components and the relationships between protein fractions and beta-amylase or beta-glucanase activity. Results showed there were great variations for 3 protein fraction (albumin, hordein and glutelin) contents between cultivars and locations, and a distinct difference in each protein fraction content between locations for a given cultivar. Correlation analysis indicated that beta-amylase activity was significantly correlated with 3 protein fraction contents, and there was a negative correlation between glutelin content and beta-amylase activity, whereas beta-amylase activity positively correlated with albumin and hordein contents. Furthermore, there was a significant positive correlation between total protein content and beta-glucanase activity. Hordein and glutelin contents did not correlate with beta-glucanase activity, but albumin contents were significantly negatively correlated with beta-glucanase activity.
