This article discusses trends, challenges and solutions regarding the formulation gluten-free foods. Aspects considered include: the definition of gluten; the gluten-free movement; formulating gluten-free products using rice derivatives; the micronutrient composition of rice bran and germ, and their use as ingredients; and textural properties of rice-based ingredients.
