Fruit firmness in table apples: market requirements, harvesting date and storage.

Over a period of several years, market forces have fixed new criteria for the properties of apples for the table. Data (firmness, sugar content, starch, and Streif index) are tabulated for 16 apple cultivars. Results are presented of studies carriedout in Switzerland during 1997-2000 on 6 cultivars (Elstar, Gala, Golden Delicious, Idared, Jonagold, and Maigold) with special reference to the effects of harvesting date and storage on firmness. Data from consumer panels are also briefly discussed.
