Recommendation of fruit juice cultivars: cider-type apple cultivars from cultivation to juice quality.

In this Swiss study 8 disease-resistant apple cultivars were examined for their agronomic characteristics, including suitability for juice manufacture, in comparison with 8 traditional cultivars. Analyses were carried out of tree properties (yield, foliage characteristics, etc); disease resistance and robustness (e.g. resistance to frost, firebrand, scab and Monilia), fruit properties (e.g. fruit size, keeping quality, ease of harvesting); and chemical and sensory properties of pressed apple juices (yields, acidity, sugar content, phenols content and sensory score). Disease-resistant cultivars were characterized by low susceptibility to diseases, good fruit properties but somewhat inferior tree properties. Results of juice pressing trials indicated that disease-resistant cultivars had similar or slightly superior processing properties and juice quality compared to traditional cultivars.
