The agri-food industry continues to enhance its security and traceability systems to deliver a farm-to-fork chain of custody. To ensure effective traceability, food animals must be identified with tamper-proof and durable techniques. However, implementing a secure method of animal identification that functions in real time, with high accuracy, has long been a source of difficulty. If the system's information is mishandled or presented incorrectly, it can lead to a breach in system integrity, expensive and time-consuming remediation, and an inevitable loss of consumer confidence. Over the last few years, extensive research has been carried out on the use of biometric identification in the food supply chain. Biometric identification is based on unique individual physiological characteristics, which are tamper proof by their nature. Biometric identifiers are ideal for animal identification because they remain with the animal throughout its life.
