Potatoes with additional usage. Production and analysis of coloured potatoes.

The article gives an overview on the attempts to grow potatoes with colourful flesh. The spectrum ranges from traditional whites and yellows to reds, blues and purples. Field results of blue potato varieties grown in integrated and organic farming systems are shown. Results indicate highest yields for cultivar Olivia in both systems (50 t/ha and 15 t/ha, respectively) other cultivars like Blauer Schwede, Hermanns Blaue and Blue Salad Potato had yield levels of only about 60%, compared to Olivia. Starch contents were between 10-15% with little difference from farming system. It is concluded that colourful potatoes with their valuable secondary ingredients are a welcome addition to other vegetables and should be treated as such in a balanced diet. It is explained that in Germany potatoes are currently not classified as vegetables.
