An investigation was undertaken to study the nutritional composition of selected Niger seed varieties.Eight varieties of Niger seeds viz., RCR-18, Nagamangala, JNS-116, IGPN-9801, BNC-5, N-71, IGP-76 and KBN were investigated for their nutrient composition. Length, width, size, bulk density and weight of 100 seed were ranged from 1.85 to 2.90mm, 0.81 to 1.01mm, 2.26 to 2.87,0.47 to 0.60g/ml and 0.30 to 0.48 g, respectively. Oil quality parameters ranged from 0.920 to 0.903, 129.59 to 121.18meq/kg, 2.4 to 1.03 per cent, and 196.98 to 190.37 mg KOH/g and 8.1 to 5.3 meq/kg of specific gravity, Iodine value, percent free fatty acid, saponification value and peroxide value per 1 OOg.Traditional products such as chikki, laddu and chutney powder was developed by substituting the major ingredients in the recipe by niger seed kernel chikki was best accepted at 50 per cent level of incorporation and 60 per cent level incorporation was best accepted for both laddu and chutney powder.
