摘要

Detection of dried milk in liquid milk is based on the determination of HMF values. The HMF content in raw unheated milk was 7.66μmol/litre and in pasteurized and UHT milk, respectively, it ranged from 10.52-16.0 to 16.33-20.85μmole/litre. HMF indried milk reconstituted to liquid milk with 9% SNF was 28.0μmole/litre. It is concluded that these HMF values can be used to detect adulteration of raw, pasteurized and UHT liquid milk with dried milk.
