摘要

Efficacy of the self-cleaning mechanism of an advanced meat recovery system (AMRS) incorporating a piston press was studied. Bone material spiked with Serratia marcescens as marker organism was processed by the AMRS followed by successive batches of non-spiked bone material. The self-cleaning mechanism, based on flushing through of any contaminated bone material by subsequent batches, was assessed by determining incidence of S. marcescens in mechanically recovered meat sampled at 2 different outlets of the separator chamber. Results showed that <=20 pressings were required to flush out all contaminated material, with results differing between sampling (outlet) location. Reasons for differences in contamination between the 2 pipe outlets are discussed, along with requirements for manual cleaning and disinfection of AMRS..
