The 2007 German Agricultural Society quality trials on Kochwurst sausages, cooked meat products and lard is reported. Proportions of samples receiving quality awards are reported, and product quality is discussed with reference to the main defects and their causes. Product types considered include: liver sausage; Rotwurst; other Kochwurst types; aspic products; cooked cured meat products; and lard.
