Slaughter animals and meat studies: future meat inspection procedure acc. to Reg. (EC) 854/2004.

摘要

Regulation (EC) 854/2004 on new detailed rules for the organization of official control of food animals intended for human consumption means a basic rethinking in the philosophy of inspection of food animals. Important items will be: (1) performance on a risk-based level; (2) facilitation of antemortem meat inspection in case of appropriate epidemiological data from the primary production; (3) if it comes to the question, which factors might be useful for the estimation of a herd in the farm of origin, there remain some open questions; (4) training and retraining for official staff on a broad base.
