In today's fast-paced foodservice environment, operators often need to transport and hold food away from the kitchen. If you're one of them, you need mobile cabinets. Mobile cabinets are foodservice workhorses from the loading dock to the final point of guest service. Operators find that mobile cabinets can offer the maximum productivity in the smallest spaces. Mobile units cam seemingly expand your kitchen space because, unlike fixed equipment, they can be moved out of the way when not needed. Ifyour needs include transporting and holding hot product, there are a variety of heated carts on the market. It's important to note that the term "hot-holding cabinet" is generally used to describe a cabinet made to hold food that is already hot, not to heat food. Many of these cabinets do not have precise thermostats or powerful enough heaters to cook food and may not be suitable for heating cold product. If you need to heat or cook product, a cabinet designated an "oven" is needed. A proofing cabinet is a specialized hot unit used in baking that can hold a very low warming temperature and introduce moisture into the cabinet compartment.
