Aflatoxins are acutely toxic when consumed in relatively large doses and may, when exposed to consumers in very small doses over a longer period, result in liver cancer. Aflatoxin M_1 is a milk-borne microbial hazard, the toxicity of which is estimated to be in the magnitude of up to 10 times less than the toxicity of Aflatoxin B_1. Aflatoxin M_1 appears in milk as the direct result of the intake of aflatoxin B_1-contaminated feed by dairy cows, Aflatoxin B_1 can be produced in feed material by the fungi Aspergillus flavus, A. parasiticus and A. nomius under warm and humid conditions. The feed materials at most risk are peanuts, cottonseed, coconut, palmkernel, maize, rice and copra.
