摘要

This article considers the history, cultural significance and current popularity of hoppin' John, a regional dish from the Southern states of the USA consisting of cow peas and rice, which is traditionally served on New Year's Day. Types of cow peas (e.g. blackeyed peas) that are commonly used in hoppin' John recipes are also described.
