Microbiological quality assessments of biradon, kesham and kindrimo: milk products sold in Maiduguri, Nigeria.

The presence of selected pathogenic bacteria in raw milk (biradon) and the nono products kesham and kindrimo sold in Maiduguri, Nigeria, was investigated. 20 samples of each product were obtained from a farm and 4 markets. Results show that the mean Escherichia coli count was 2.43, 3.31 and 2.82 log10 cfu/ml, respectively; corresponding concn. ranges were 0.0-6.22, 0.0-6.30 and 0.0-5.48 log10 cfu/ml. 21.6, 23.2 and 26.4% of biradon, kesham and kindrimo samples, respectively, contained E. coli. Mean Staphylococcus aureus counts for biradon, kesham and kindrimo were 2.65, 1.16 and 2.41 log10 cfu/ml, respectively; corresponding concn. ranges were 0.0-6.79, 0.0-3.87 and 0.0-6.39 log10 cfu/ml, and mean contamination rates were 32.8, 19.6 and 18.6% of samples, respectively. The overall mean Shigella counts were 0.15, 0.40 and 0.24 log10 cfu/ml for biradon, kesham and kindrimo samples, respectively, with concn. ranges of 0.0-0.48, 0.0-2.48 and 0.0-0.90, respectively, and mean incidence values were 2.0, 6.0, 5.6%, respectively. Overall mean Salmonella counts were 1.44, 1.83 and 1.23 log10 cfu/ml, and concn. ranges were 0.0 -4.02, 0.0-4.76 and 0.0-3.30, respectively, for biradon, kesham and kindrimo; corresponding contamination rates were 7.6, 9.8, 7.6%. Overall mean coliforms counts for biradon, kesham and kindrimo were 2.94, 4.12 and 3.72 log10 cfu/ml, respectively, with ranges of 0.0-6.48, 0.0-7.51 and 0.0-6.70; corresponding overall mean contamination rates were 30.8, 38.6 and 35.2%. Total viable overall means were 5.34, 7.27 and 6.58 log10 cfu/ml for biradon, kesham and kindrimo; corresponding concn. ranges were 0.0- 8.48, 0.0-9.85 and 0.0-9.90. It is concluded that these dairy products are contaminated with potentially harmful bacteria. Thus, proper hygiene in nono processing lines is recommended.
