摘要

Potato (Solanum tuberosum) an important tuber crop of solanaceae family. Punjab occupies 4lh position in India with production of 852000 million tones. Advancement in the prevailing storage techniques in Indian scenario gives an opportunity of its availability throughout the year for processing. From ancient times potato based food products are important processed items and still gaining popularity among all the classes of the society. Starch an important food additive goes as waste during the process of snack manufacturing especially during pretreatment process. Starch was isolated from two commercial potato cultivars Kufri Satluj and Kufri Pukhraj obtained from Malwa region of Punjab and characterized on the basis of physico-chemical features forits utilization in value added food products. Kufri Pukhraj has shown more swelling power as compared to Kufri Sutluj and up to 3.0% of starch could be recovered from the steeping liquor.
