Dear Sir,Recently, Gonzalez et al. reported epidemiologic findings regarding dietary preventive1 and risk2 factors for cardia and noncardia stomach and esophageal cancer from EPIC-EURO-GAST, a large prospective study. Vegetable intake was found to be related to a lowered risk of intestinal type gastric cancer and adenocarcinoma of the esophagus, and citrus fruit consumption appeared to have a role in protection against cardia gastric cancer and adenocarcinoma of the esophagus.' On the other hand, consumption of total, red and processed meat was associated with an elevated risk of noncardia gastric cancer.2Most malignancies, including stomach cancer, evolve as a consequence of interactions between host and environmental/ behavioural/lifestyle factors.3 In addition to smoking and salt/ salty foods, meat may be an exogenous risk factor for stomach cancer, as discussed by Gonzalez et a!.,2 since it contains iron, an oxidizing agent, and potentially also pyrolysate products, like the carcinogenic heterocyclic amines/polycyclic aromatic hydrocarbons, when roasted/broiled, as exogenous carcinogens." TV-Nitroso compounds can furthermore be endogenously produced from amines in meat and nitrite in the stomach.
