摘要

Microbial quality of fish and fishery products has always been a critical discipline in the assurance offish quality and safety, as most food-borne epidemics result fromthe consumption of contaminated fish and fishery products. Assessment of the microbial quality in fish and fishery products mostly relies on the conventional culture-based methods that are very tedious, lack specificity and often give very little inference about clinical aspects. With the development of rapid deoxyribonucleic acid (DNA) based methods, these drawbacks have been partially eliminated with the introduction of polymerase chain reaction (PCR) analysis of bacterial pathogens that provides improved sensitivity, specificity and speed of detection. As time is always a limiting factor, the urge for a method that is much more rapid, sensitive, detects a large number of pathogens in a single assay and provides clinical inferences on its pathogenicity brought about the development of the microarray technique. Nowadays, microarray has been extended to the food industry for the detection of bacterial pathogens associated with food.
