Biochemical studies on internal breakdown - a ripening disorder in mango fruits

Alphonso, the most valued mango variety for its aroma and taste which alone accounts for 60 percent of the total export, is susceptible to internal breakdown known as 'soft centre' or 'spongy tissue' during ripening. The other susceptible varieties are Jamadar, Vanraj, Olour, Goamankur, Vellaikulumban, Suvarnarekha and Fernandin. Recently, this disorder was found in variety Mallika. Ecological factors, stage of maturity at harvesting, crop load and fruit weight, orchard conditions, nutritional imbalances (Yadav, 23) leading to inhibition of ripening process in central portions of pulp are some of the reasons attributed to this disorder. The study in the present paper was designed to understand whether spongy tissue occurred because of inhibition of ripening process in certain portions of the fruit pulp in Alphonso and Mallika cultivars.
