摘要

Kunthalgiri pedha is a traditional milk product famous in Kunthalgiri, district Osmanabad and adjoining areas. An attempt was made to study the comparative characterization and evaluation of Kuntalgiri pedha with Parbhani local market pedha and Gangakhed kalam. Proximate compositionaI analysis indicated that Kuntalgiri pedha contains more amount of fat, protein, lactose and less amount of sucrose and moisture as compared to Parbhani local market pedha and Gangakhed kalam. Overall acceptability scoreof Kuntalgiri pedha was found significantly better than Parbhani local market pedha and Gangakhed Kalam. Kuntalgiri pedha has rich and pleasant flavour with glossy appearance and oilish surface. Kuntalgiri pedha is liked by consumers because of its taste, flavour but this product was prepared on small scale by local traders.
