South America has incredible biodiversity and a capacity to supply food for humans. Meat from farmed indigenous species is a practical approach to ensure the use and sustainability of the animal biodiversity.The indigenous meat-producing species considered in the present work are the most promising animals to produce new and innovative food for Latin America and the world.Farming of these indigenous species could be a key strategy to ensure the nutritional security and income for many families inhabiting remote rural zones in South America.Nutritional information on the meat from these species is scarce, which is a major challenge.
