A factory in Young is putting extra cash in orchardists' pockets by processing fruit that otherwise could have been left for the birds. A CHERRY growing family at Young in the central west of New South Wales has tapped into the district's growing tourism industry by turning undersized or blemished locally-grown fruit into jams, sauces and chutneys. Lester and Jan Donges are the co-founders of JD's Jam Factory, a popular tourist stopover on the outskirts of Young, where visitors can watch jams being made and bottled, and sample the finished products.
