THE CREDIBILITY of the Eating Quality Scheme (EQS), is directly linked to the accurate prediction of gating quality as judged by consumers. The system has a simple philosophy; determine beef grades from consumer research and consistently and honestly identify beef into these grades. In establishing grade standards we must concentrate solely on consumer data and totally exclude any consideration of breed, growth patterns, seasons, abattoirs, retailers or industry politics. These issues may all have effect on production in order to meet various grade alternatives but they have nothing to do with the grade standard.
