Safety is paramount in any industry, but especially in the food industry. Stephen Brand of Advancing Food Safety shared some insights into developing a food safety program that keeps consumers out of the hospital and food manufacturers out of jail. Ahealthy dose of realism is mandatory when designing a food safety program. "Although many companies rely on HACCP as their risk assessment tool, it is a myth that HACCP guarantees food safety. At best, it can only guarantee a high level of confidence that the food is safe to consume," Mr Brand said.
