Milk is an excellent natural source of nutrients. Its ingredients, in its natural form and their derivatives, have many physiological functions which act as ingredients in functional food industry. The key health trends are changing from (i) Functional to naturally functional and organic (ii) Carbohydrates to good carbohydrates (e.g. fruits, vegetables, whole grains & fibres) (iii) Sugar to low/reduced sugar (iv) Digestion to digestive wellness (e.g. probiotic, prebiotic, synbiotic, fibres) (v) Low fat to reborn fat (e.g. oily fish, unsaturated fat, olive oil, nuts etc).
