Washington's ideal growing conditions and competitive food processing industry result in profitable and tasty potato products. Producing 20 percent of the U.S. potato crop and exporting 95 percent of the U.S. potato exports is a feat Washington Stateproducers and food processors can brag about. Washington potato products include not coly fresh potatoes and frozen, but a wide range of dehydrated and other processed forms as well. "Washington leads the nation in the expert of potatoes and potato products," says Shannen Bcrnsen, director of marketing for the Washington State Potato Commission in Moses Lake, Washington. "Washington is the country's largest French fry manufacturing state. About 40 percent of the nation's French fries come from Washington. Washington also produces dehydrated potato flakes, grannles, slices, shreds, and dehydro-frozen product."
