Edible mushrooms are an excellent source of protein, vitamins find minerals. Most of the mushrooms free from starch and others free sugars can form an ideal food for diabetic patient. These are dekncy in food and form ono of the choisest tabledishes. They are not staple food as such but can serve as an important supplement to diet. The techniques of artificial cultivation are available for many species. In India three species are being cultivated on commercial scale. These are Agaricusblsporus (white button mushrooms) volvariella spp. (paddy straw mushrooms) and Pleurotus species (cyster mushroom). Out of these species of mushroom, cultivation of system mushrocm (Pleurotus spp.) is the roost easiest and economical as these do not require fermented compost and casing operation. These can grow on a variety of waste substrates under a wide range 17-30°C of temperature.
