A Veterinarians Mission Peispectiae

I recall being on a short-term mission trip in Nicaragua as a veterinary student and being served a lovely cut of meat for a meal. The steak, although served with so much love and gratitude, was riddled with holes. When asked about the holes, our hosts could not understand the question, because surely all meat had holes. We could not fathom the other's reality...their reality being, it turned out, that all animals were so heavily parasitized that holes in meat were normal. What valuable perspective they provided me that day, and what an opportunity we have to serve others through healthcare-based mission work.
