If ever there was a grape varietal that required the perfect balance, Pinot Noir would be the one. It can be challenging to grow, produce and age. However, when the balance is right the resulting wines can be majestic and worth the pain. In the past 5-6 years yields have been quite high in Victorian regions. Optimal conditions would not be too hot (sometimes hard in Australia) with cool evening temperatures to ensure optimal balance. The aromatic profile and flavour is very important in the berry stage as this is an indication that the structure of the resulting wine will be fine, in contrast to a varietal like Cabernet Sauvignon where the focus is more on tannin structure.
